Comfort Soup
So easy and good on a cold night with garlic bread. Chop and fry three leeks with garlic and rosemary. Add 3 chopped potatoes, one chopped sweet potato, this time I also added pumpkin and parsnip. Cover with water and pop in a couple of vegie stock cubes (or real stock if you are feeling keen) and boil until the potato is soft. Then add a tin of cannellini beans and blend, pour in enough soy milk til it’s the consistency you like. Add a sprinkle of salt, pepper and smoked paprika, serve with a pile of rocket, spinach or parsley on top, so you get your greens :) it’s even better the next day just add a bit more soy milk as it thickens up.
