Cookies!!!
I adapted this recipe from Colleen Patrick-Goudreau’s oatmeal raisin cookies in the Joy of Vegan Baking. First move was to use chocolate instead of Raisins!
Start by blending 2 tbl spoons chia seeds with 6 tbl spoons water, set aside to go gooey. Cream 1 cup nuttalex with 1 3/4 cups raw sugar and 2 tsp vanilla extract.
Sift 1 3/4 cups flour (spelt works) with 3/4 tsp baking powder & 3/4 tsp baking soda, pinch salt and a sprinkle of cinnamon. Grind 1/2 cup rolled oats in the blender, then mix all of the above together, add 3 cups rolled oats and 1 cup choc chips (or just chop up a block of dark chocolate), nuts would also be great.
Once it’s all mixed, roll into balls and bake for 15 min at 180 degrees. Leave to firm up for a couple of minutes then transfer to a wire rack to cool.
