Vegan Banana, Chia & Spelt Waffles.
This is a pretty free form recipe, feel free to adjust amounts and flavours :)
Start by soaking 1/4 cup chia seeds in water, until they look gluey, this will bond your waffle together.
Sift a cup of spelt flour and 2 tsp baking powder into bowl, add the chia seeds, one ripe banana, mashed, vanilla extract, a tblsp of coconut oil, a tblsp raw sugar and a tsp apple cider vinegar, mix and add soy milk until it reached a consistency you are happy with. The sloppier your mix, the lighter and more delicate your waffles will be.
I served mine with agave, berry Coyo, and grape, blood plum and peach.
