This is my new favorite way to cook cauliflower, steam it, then squash in the sandwich press with olive oil, crushed garlic, salt and pepper. So tasty and versatile!
In the salad above I mixed it with avocado, grilled red capsicum, basil, spring onion, lemon juice, more olive oil and served with hummus.
I’ve also served it with chili, lemon juice & zest, rocket and chia seeds.
I’m thinking of trying a creamy cashew sauce next time….
